Modern Food Science and Technology (ISSN 1673-9078, CN 44-1620/TS) is an academic journal in the field of food science, sponsored by South China University of Technology and organized by the School of Food Science and Engineering of the university. It has been included in “A Guide to the Core Journals of China” and selected as a Source Journal for Chinese Scientific and Technical Papers and Citations. Founded in 1985, the journal is currently published monthly, with postal distribution code 46-349.
1. Aims & Scope
The journal focuses on new achievements, products, technologies, and processes in food science and technology, as well as updates on international scientific and technological trends. It publishes scientific research papers in food science and related disciplines, with main sectors including food nutrition, food biochemistry, storage and preservation, bioengineering, food processing, food flavor, safety control, and thematic reviews.
§ Food Nutrition – Fundamentals of food nutrition; diet and nutrition; interactions among food constituents; functional food components/factors; relationships between food and gut microbiota.
§ Food Biochemistry – Food enzymology; food proteins; food carbohydrates; food lipids; analytical studies of other food components.
§ Storage & Preservation – Storage of cereals, oils and their products; post-harvest storage and preservation of fruits and other produce.
§ Bioengineering – Food microbiology; lactic-acid bacteria and probiotics; food fermentation and brewing; food biotechnological processes; fundamentals of molecular biology; innovative methodologies, techniques, and systems in molecular biology research; design of synthetic gene pathways.
§ Food Processing – Biological foundations of food‐processing operations; raw-material science for food production.
§ Food Flavor – Flavor compounds; flavor chemistry and analytical methodologies; interactions between flavor and other food components; sensory evaluation of flavor and overall product quality.
§ Safety Control – Target-analyte isolation in food matrices; physicochemical and biological detection techniques; authenticity testing and traceability; chemical hazards and their mitigation; microbial hazards and control strategies; biotoxins and other biological hazards, and their control.
§ Thematic Reviews – Comprehensive theoretical syntheses, latest progress reports, and analyses of emerging industry trends within the food domain.
2. Manuscript Requirements
1) Submissions must be original and innovative, with sound scientific reasoning, clear topics, and rigorous logic. Wording should be precise and concise, and standard simplified Chinese characters must be used. Manuscripts must comply with national standards for legal measurement units, number usage, punctuation, and other conventions.
2) The journal only accepts original (first-published) manuscripts. The editorial office of the journal has the right to make textual modifications to manuscripts. To protect the authorship and intellectual property rights, both the corresponding author and co-authors are required to sign the Copyright Transfer Agreement.
3) Formatting Requirements: Use an A4 page size with 10.5 pt text. Please refer to the Manuscript Template below for more details.

4. Submission Procedure
Please submit your manuscript via the journal’s official website (https://xdspkj.ijournals.cn). The submission process includes the following steps:
1) Author registration;
2) Review the Submission Guidelines and revise the manuscript according to the Manuscript Template;
3) Submit the manuscript following the system prompts, upload the manuscript file (without author information) and attachments (with author information);
4) Fill in the manuscript information;
5) Fill in the author information;
6) Add recommended reviewers’ information (optional);
7) Confirm the submission;
8) Complete the submission.
Submission Notes:
1) Items marked with * are mandatory.
2) Each article must have a submitting author and a corresponding author (responsible author), who can be the same person. For student works, the corresponding author should be the supervisor.
3) To improve the efficiency of the peer review process, authors are encouraged to recommend experts to the editorial office. At least two reviewers with senior professional titles from outside of South China University of Technology should be recommended, and their research fields, postal addresses, and email addresses should be provided. Authors may recommend more than two reviewers.
4) All authors listed on the manuscript must be entered into the submission system. Contact information must be provided for the first and corresponding authors. The provided phone number must be one that is reliably available.
5. Publication Workflow
1) After the manuscript is successfully submitted, the system will assign a submission ID and email the author a receipt notice.
2) The manuscript will first undergo an initial review. If the manuscript meets the requirements, it will proceed promptly to external peer review. The journal never collects a review fee, so disregard any such requests. Submissions that do not pass the initial review are either returned for revision or declined.
3) The manuscript undergoes external peer review; if approved, a revision notice will be sent to the author, otherwise, the manuscript will be rejected. When needed, the revised manuscript undergoes a second round of peer review.
4) The manuscript then undergoes a final review, after which a decision on acceptance is made.
5) For accepted manuscripts, the editorial office will notify the author of the publication date and fee amount after determining the issue in which the article will be published. After payment, please enter the invoice information in the submission system. The invoice title and taxpayer ID must be accurate.
6) Then, authors will be required to submit a Copyright Transfer Agreement signed by the corresponding author and co-authors.
7) The accepted manuscript is edited and released online as an Online First Article. The manuscript is also sent to the author for proofreading. If you prefer to skip online-first publication, please contact the journal immediately.
8) The article appears in the print journal. Then it is forwarded to domestic and international databases for indexing.
9) About half a month after the print issue is published (longer if holidays intervene), complimentary copies of the issue will be mailed to the institution of the first or corresponding author.
10) The editorial office strives to notify authors whether the manuscript is accepted within about 60 days of manuscript receipt.
