Abstract:Aquatic products are susceptible to stress reactions during transportation due to various stressors such as temperature, hypoxia, crowding, vibration, and ammonia nitrogen. At present, the use of temporary culture methods such as adding salt and antioxidants, and inducing dormancy through cold acclimation has become an effective way to alleviate fish transportation stress. By comparing the experimental results on the health status of different species of freshwater fish, shrimp and crab products under temporary culture methods such as the uses of clean water, low temperature, and additives, the changes of physiological characteristics and quality indexes of products under different conditions were analyzed. This paper reviews the research and application of different temporary culture methods for freshwater products in recent years, and their effects on the physiological characteristics and muscle quality of freshwater products, to provide reference strategies for optimizing temporary culture conditions and improving the survival rate and quality of freshwater products.
