Abstract:Food crops are at risk of mycotoxin contamination during production, storage, and transportation, raising food safety concerns. Traditional chemical methods for detecting mycotoxins are complex and time-consuming. In contrast, molecular vibrational spectroscopy simplifies detection and allows for the simultaneous analysis of multiple components, attracting significant attention. This study explores the principles and applications of molecular vibration spectroscopy and multispectral image data fusion for the rapid detection of mycotoxins in food crops, emphasizing the need for improved sensitivity, stability, and practicality. The proposed strategies focus on simplifying procedures, upgrading chemometrics, building databases, and developing portable devices to advance the application of molecular vibrational spectroscopy and multispectral image data fusion.
