    Abstract:

    The quality and safety of edible vegetable oils are crucial for the development of the vegetable oil industry and the protection of human health. This paper provides a comprehensive review of potential safety risk substances in edible vegetable oils, including pollution sources pollution status and detection techniques of heavy metals, mycotoxins, pesticide residues, and other harmful substances. In the meantime, this paper describes in detail the potential impact of each safety risk substance on human health, in order to enhance the practical significance of the research. It is recommended that China's food safety regulatory authorities should revise the category, scope and limit requirements for safety risk substances in edible vegetable oil through evaluating the development of edible vegetable oil industry and the risk level of safety risk substances. Furthermore, food testing institutions are encouraged to develop and establish rapid detection methods for safety risk substances in edible vegetable oils, so as to provide support for the monitoring and control of safety risk substances in edible vegetable oils.
