Abstract:
Sterculia nobilis Smith nuts are rich in starch. However, there are few relevant studies about the molecular structure of starch in Smith nuts and its digestibility. Cooking before shelling and shelling before cooking were used to treat the Smith nuts in order to explore the digestibility and molecular structure of starch, which investigated the relationship between the starch digestibility and its molecular structure.
