Abstract:This paper determined the content of sodium glutamate in chicken powder by amino acid autoanalyzer. The monosodium glutamate content in chicken powder was up to 0.27~0.32 g/g. This method had high degree of automation, reproducibility and accuracy. It was also easily operated with good reproducibility. Sample preparation was simple and direct.Its recovery can achieve 99.41~103.66% and the precision was 0.39 %.
