Abstract:The response surface methodology based on single factor experiments and Box-Behnken design principle was used to optimize processing parameters of ultrasonic-assisted extraction for pigments from Physalis alkekengi L. Results showed that the optimal processing conditions of extraction were liquid/material ratio of 7:1 (mL/g), ultrasonic power of 160 W, ultrasonic temperature of 41 ℃, and ultrasonic time of 53 min. Under these conditions the pigment yield was 2.68%.
