Abstract:In this study, extract of wood frogs eggs was used as main material to prepare a functional beverage. The results showed that the optimum formula of the stabilizer and emulsifier were as followings: CMC-Na 0.12%, PGA 0.08% and monoglycerides 0.15%. The optimum formula of the beverage was as followings: extract of wood frogs eggs 20%, sugar 8% and pH 3.8.
