    Abstract:

    The processing technology of high protein powder was studied using wasted yolk powder as materials. The results showed that the best ethanol extraction conditions were as follows: the ratio of ethanol to yolk power of 1:3, temperature of 40 ℃, extraction time of 4 h and batch blending.
