Abstract:The content of sodium hydrosulphite, an illegal chemical additive in flour, was detected by Ion Chromatography after oxidized by KMnO4. Results showed that the content of sodium hydrosulphite in flour was 500~2000 mg/kg. The ranges of recovery rate and RSD were 93.04%~117.42% and 0.57%~2.25%, respectively. This simple and accurate method was suitable for the sodium hydrosulphite determination in flour.
