Effect of Selenium Enrichment Processing on GSH-Px Activity and GSH Content of Mung Bean

Abstract:
Glutathione Peroxidose (GSH-Px) is a selenium-dependent enzyme which had been found in animal cells at first, and then has been discovered in many plants in recent years. Researchers has found that preferential concentrations exogenous Se could increase the GSH-Px activity of organism. In order to investigate the relationship between Se and the GSH-Px activity of mung bean, the mung bean had been soaked in a NaSe2O3 solution for 5 hours, and then been germinated in the ambient for a given period. The Se content and the GSH-Px activity of the processed mung bean were determined. Results indicate that exogenous Se increases the activity of GSH-Px in mung bean. Regardless of the immersing stage or the germinating stage, the GSH-Px activity of the selenium processed mung bean is higher than the same of the counterpart. After soaking in the selenium solution for 5 hours, the GSH-Px activity of the mung bean is remarkably increase, 59.38% higher than the same of the counterpart.
