Abstract:The hydrolysis of the Chinese pine pollen protein by alkaline protease and papain was studied and the nitrogen solubility index, hydroxygen free radical-cleaning property and the antioxidant activity of the peptides achieved with two methods were compared. The peptide achieved by alkaline protease-catalyzed hydrolysis had higher nitrogen solubility index and lower hydroxygen free radical-cleaning property and antioxidant activity than that achieved by papain-catalyzed hydrolysis of Chinese pine pollen protein.
