Abstract:The application and development of the methods for detection of salmonella in food were reviewed here. Emphasis was laid on the molecular biological and immunology techniques, such as PCR and ELISA, which developed rapidly in the detection of salmonella in recent years due to their sensitivity and specificity. The directions of those detection methods and their application prospects were also viewed.
