Abstract:Safety and residues of sulphites in aquatic products are researched. The results show that sulphites have been widely used in the products of fish, prawn and crab and have different functions in different products. The residues of sulphites in products differ owing to the different processing method and adding amounts. All these demonstrate that sulphites have become one of major contaminations in aquatic products.
