Abstract:Protein of Wenqing Carp was hydrolyzed by subtilisin and papain simultaneously. The yield of the hydrolysis was 71.21% under the optimum temperature, ratio of substrate to water, subtilisin dosage, papain dosage and hydrolysis time being of 50 ℃, 1:2, 2%, 2.5% and 5.5 h, respectively.
