为筛选江苏地区适制碾茶的茶树品种,通过品质成分检测、儿茶素品质系数与主成分相关性分析,该研究比较了7个碾茶的品质差异。结果表明:在相同遮阴管理措施和加工条件下,7个茶树品种碾茶的品质成分含量与儿茶素品质系数差异显著(P<0.05)。其中茅麓群体种的蛋白质(31.74%)、茶多酚(14.10%)、SDF(4.28%)、总叶绿素(4.89 mg·g-1)、叶绿素b(2.82 mg·g-1)、维生素C(5.72 mg·g-1)与GA(2.32%)等质量浓度及CAI值均最高(15.69),IDF/SDF最低(7.58)。主成分分析表明,水浸出物、可溶性糖、儿茶素组分、维生素C、SDF和IDF是碾茶品质的表征性成分,反应不同茶树品种加工碾茶的品质差异。茅麓群体种的主成分综合得分最高为1.17,表明品质综合特性较好。综上,江苏地区的茅麓群体种加工碾茶的品质较好。该研究为筛选适制碾茶的茶树品种提供重要的理论依据。

In order to screen tea cultivars suitable for tencha production in the area of Jiangsu, This study compared the quality differences of seven tencha through the detection of quality components, and the analysis of catechin quality index and principal component correlation. The results showed that there were significant differences (P < 0.05) between the quality components and the catechin quality index in seven tencha producted by the seven tea plant cultivars which were under the same shading management and processing conditions. The contents of protein, tea polyphenols, SDF, total chlorophyll, chlorophyll b, vitamin C, GA and CAI were the highest in the Maolu tea plant group species, which mass concentration was 31.74%, 14.10%, 4.28%, 4.89 mg·g-1, 2.82 mg·g-1, 5.72 mg·g-1, 2.32% and 15.69, respectively, while the ratio of IDF/SDF was minimum of 7.58. Principal component analysis showed that water extract, soluble sugar, catechin component, vitamin C, SDF and IDF were the characteristic components of the quality of the tencha, reflecting the quality difference of the tencha produced by different tea plant cultivars. The composite score of principal component of the Maolu tea plant group species was 1.17, which was the highest, indicating that the comprehensive characteristics of quality were good. In conclusion, the quality of tencha was better, which produced by the Maolu tea plant group species in the area of Jiangsu.This study can provide an important theoretical basis for the screening tea cultivars suitable for tencha production.
