粮食作物不仅是人类生存所需,也是家畜饲料来源,其在生产、储存、运输过程中容易受到真菌毒素污染,引发食品安全问题。相较于传统化学手段检测真菌毒素的步骤复杂、耗时长,分子振动光谱具有同时检测多种成分、操作简单等优点,因此分子振动光谱检测真菌毒素的应用逐渐得到广泛关注。本文着重介绍了分子振动光谱(近红外光谱、中红外光谱、拉曼光谱、高光谱)以及新兴的光谱数据融合技术在快速检测粮食中真菌毒素的工作原理和应用,总结了不同光谱技术在检测真菌的优势及不足,并对它们未来发展方向进行了展望。

Food crops are not only needed for human survival, but also the source of livestock feed, which is easily contaminated by mycotoxins in the process of production, storage and transportation, leading to food safety problems. Compared with traditional chemical methods, the steps of mycotoxins detection are complex and time-consuming, and molecular vibration spectroscopy has the advantages of simultaneous detection of multiple components and simple operation, so the application of molecular vibration spectroscopy for mycotoxins detection has gradually attracted wide attention. In this paper, the working principle and application of molecular vibration spectroscopy (near infrared spectroscopy, mid-infrared spectroscopy, Raman spectroscopy, hyperspectroscopy) and new spectral data fusion techniques in the rapid detection of mycotoxins in grain were introduced. The advantages and disadvantages of different spectral techniques in the detection of fungi were summarized, and their future development direction was prospected.
