贵州黄花梨蜂蜜作为一种新单花蜜,具有较高的营养价值。该文利用超高效液相色谱-四级杆串联飞行时间质谱(UPLC-QTOF-MS)代谢组学技术对贵州4种蜂蜜(黄花梨蜜、五倍子蜜、蓝莓蜜、枇杷蜜)和新西兰麦卢卡蜜进行代谢物分析,在正负离子模式下共检测到1788种代谢物。主成分模型(PCA)显示黄花梨蜜和麦卢卡蜜代谢物质成分相近,与其余蜂蜜之间有明显差异。黄花梨蜜与其余4种蜂蜜分别进行差异代谢物(VIP>1,P<0.05)筛选和鉴定:黄花梨蜜vs五倍子蜜58种、黄花梨蜜vs蓝莓蜜66种、黄花梨蜜vs枇杷蜜60种、黄花梨蜜vs麦卢卡蜜67种。对差异代谢物进行KEGG富集分析,得到前5条主要代谢通路均表现一致:蛋白质的消化和吸收、碳水化合物代谢、氨酰基tRNA生物合成、ABC运输和矿物质吸收。此外,黄花梨蜜中水苏糖、鼠李糖、甘露糖、天冬氨酸、芹菜素、木犀草素、鞣花酸和白藜芦醇含量较高,这些化合物可作为潜在的标志物区分黄花梨蜜与其他蜜。研究结果从整体水平上揭示不同品种蜂蜜代谢物差异,为黄花梨蜜的鉴别和品质评价提供方向。

Guizhou Dalbergia odorifera honey, as a new single nectar, has high nutritional value. Metabolite analyses of four honeys from Guizhou (Dalbergia odorifera honey, quintuple honey, blueberry honey, loquat honey) and New Zealand manuka honey were carried out using ultra performance liquid chromatography-quadrupole tandem time-of-flight mass spectrometry (UPLC-QTOF-MS) metabolomics, and a total of 1,788 metabolites were detected in positive and negative ion modes. Principal component modeling (PCA) showed similar metabolite compositions between Dalbergia odorifera and manuka honey, with significant differences between them and the rest of the honeys. Differential metabolites between Dalbergia odorifera honey and the other four types of honey were further screened and identified (VIP>1, P<0.05). Results showed 58 differential metabolites between Dalbergia odorifera honey and gallnut honey, 66 between Dalbergia odorifera honey and blueberry honey, 60 between Dalbergia odorifera honey and loquat honey, and 67 between Dalbergia odorifera honey and manuka honey. KEGG enrichment analysis of the differential metabolites yielded consistent performance for the first five major metabolic pathways: protein digestion and absorption, carbohydrate metabolism, aminoacyl tRNA biosynthesis, ABC transport, and mineral absorption. In addition, the content of fructose, rhamnose, mannose, aspartic acid, apigenin, lignans, ellagic acid and resveratrol in Dalbergia odorifera honey is high, which can be used as potential markers to differentiate Dalbergia odorifera honey and others honeys. The results of the study revealed the differences in metabolites of different honey varieties at the overall level, and provided directions for the identification and quality evaluation of Dalbergia odorifera honey.
