    摘要:

    红枣富含营养和活性成分,是一种药食两用的优质资源。随着红枣消费需求由追求产量逐渐向追求品质的转变,人们对红枣营养价值及生物活性关注度越来越高。红枣活性成分种类繁多,作用机制复杂,且不同产地和不同红枣品种活性成分含量不同,其功能活性也有所差异。因此明确红枣主要的活性成分及其功能活性之间的联系,解析其作用机制,对红枣的进一步开发利用具有重要的指导意义。本文通过梳理红枣的主要活性成分,针对其抗氧化、抗炎、抗癌、免疫调节、护肝等方面的生物活性进行文献综述,探讨其作用机理及研究现状,旨在为红枣资源深加工和高效利用提供参考和思路。

    Abstract:

    Jujube is rich in nutrients and active ingredients. It is a kind of high-quality resource for both medicine and food. With the change of consumption demand from the pursuit of yield to the pursuit of quality, people pay more and more attention to the nutritional value and biological activity of jujube. There are many kinds of active ingredients in jujube, the mechanism of action is complex, and the content of active ingredients in different places and different jujube varieties is different, and their functional activities are also different. Therefore, to clarify the relationship between the main active ingredients and their functional activities and to analyze their mechanism of action is of great guiding significance for the further development and utilization of jujube. By reviewing the main active ingredients of jujube, this paper reviewed the literature on its antioxidant, anti-inflammatory, anticancer, immunomodulatory and liver protection activities, and discussed its mechanism of action and research status, aiming to provide references and ideas for deep processing and efficient utilization of jujube resources.
