Abstract:The COVID-19 and the Home Economics have contributed to a new consumer trend of “convenience dining” represented by pre-prepared food. Digital technologies have given rise to new scenarios of application and value creation, driven innovation in factors, processes and organizational management, and empowering industrial upgrading. The study analyzed the lack of origin pre-cooling and the lack of information elements in the cold chain supply chain of China's pre-prepared food, such as insufficient cold chain support facilities, irregular cold chain operations, last-mile distribution and sales loss. The digital twin model could simulate and predicts changes in the quality of pre-prepared food during the cold chain process, and the introduction of technologies such as the Internet of Things and blockchain could enable transport monitoring and traceability of products. This study proposed the use of digital twin technology to build a digital cold chain tracking and tracing system for pre-prepared food, to implement the “chaining” development of the supply chain, digital chain, trust chain and benefit chain of the cold chain supply chain of pre-prepared food, to try to explore a digital road suitable for the development of China's pre-prepared food, and to help the digital transformation and industrial development of the pre-prepared vegetables and cold chain supply chain.
