为了正确认识和解决食品甲醛问题,本文通过收集国内外资料,结合实验室研究工作,对甲醛的危害、食品中甲醛的含量、来源以及国内外对食品中甲醛控制技术的研究作了综述,重点阐述了食品内源性甲醛的产生及控制。
