Abstract:Tartary buckwheat is a homologous plant of medicine and food, and its planting area and yield in China rank first in the world. As an important food crop, it is expected to become the target of many planting industries in the future. Buckwheat contains a variety of nutrients and bioactive ingredients, such as polysaccharide, protein, selenium, phytosterols, flavonoids, polyphenols, etc. They play an important role in antioxidant, anti-inflammatory, anti-cancer, hypolipidemic, anti-diabetes, liver protection and so on, and have a very broad application prospect in food and pharmaceutical industry. In recent years, Tartary buckwheat has become a research hotspot of scholars at home and abroad. However, the current studies on the active ingredients and nutritional efficacy of Tartary buckwheat lack a systematic review. In this paper, the relevant literature at home and abroad were reviewed, and the active ingredients, nutritional efficacy and application status in food were reviewed, aiming to provide a theoretical basis for the comprehensive development and utilization of Tartary buckwheat.
