Abstract:Oats are rich in soluble dietary fiber, particularly β-glucans. This paper summarizes the extraction processes of oat β-glucan, elucidating the extraction rates, purification effects, and functional characteristics of various processes. The review provides an overview of the current research status of oat β-glucan in aquatic products, encompassing both aquaculture and aquatic food. It aims to identify the challenges faced in the current applications of oat β-glucan and offers theoretical references for its further development and utilization.
