通过活化酯法制备了三种丙烯酰胺人工抗原并进行动物免疫,得到高效价抗体,经测定三种抗血清效价分别为1:32000、1:40000、1:80000。比较三种人工抗原,使用对巯基苯甲酸衍生方法获得的抗体对衍生产物表现了很高的特异性,经测定针对1 μg/mL衍生产物的抑制率达到80.7%,而针对丙烯酰胺及对巯基苯甲酸均无交叉反应。本研究为建立快速检测食品中丙烯酰胺残留的ELISA方法奠定基础。

Rabbits were immunized with three kinds of acrylamide artificial antigens which were synthetized via active ester method, then the antibodies with the titer of 1:32000, 1:40000 and 1:8000 were obtained. High specific antibody was produced from acrylamide and 3-mercaptobenzoic acid (3-MBA). The inhibition rate of antibody against acrylamide derivative at the concentration of 1 μg/mL was 80.7%, and there was no cross-reactivity with acrylamide or 3-MBA. The research provided references for the rapid detection for acrylamide in processed food by ELISA method.
