Effects of Chicken Enzymatic Hydrolysates on Anti-fatigue and Antioxidant Activity in Mice

Abstract:
Abstract: The anti-fatigue and anti-oxidation effects of chicken enzymatic hydrolysates EP1 and EP2 were studied in this paper. Normal saline and chicken homogenate (protein dose 200 mg/kg·bw·d) were used as the control group, and 40 mg/kg·bw·d and 200 mg/kg·bw·d of EP1 and EP2 were administered to the mice for 28 days after gavage. The exhausted swimming time, serum urea nitrogen content, serum lactic acid content and liver glycogen content of the mice were measured after 30min of swimming.The activities of SOD (superoxide dismutase), GSH-Px. (glutathione peroxidase) and CAT (catalase) in mouse serum were analyzed. The results showed that chicken hydrolysates could effectively prolong the exhausted swimming time of mice.The content of serum lactic acid and serum urea nitrogen were significantly decreased after 30min of swimming, and the content of liver glycogen was increased. The activity of SOD, GSH-Px. and CAT antioxidant enzymes in serum of mice after swimming for 30min was significantly increased. The research results suggest, chicken enzymatic hydrolysates EP1 and EP2 can significantly extend the exhaustion swimming time of mice, reduced the consumption of liver glycogen, reduced the lactic acid production and deposition after intense exercise of mice, stimulate protein metabolism and effectively remove the serum urea nitrogen of mice. The antioxidant activity of SOD, CAT and GSH-Px. in serum of mice was increased, enhance the free radical scavenging ability of mice, improve the exercise status of mice, ensure that the mice in the state of intense exercise in aerobic exercise mode, so as to reduce the fatigue degree of the body after intense exercise, with significant anti-fatigue and anti-oxidation effect.
