食源性致病菌可通过多种途径污染食品,通过食物进入体内,侵害消费者健康,造成巨大的经济损失。大肠杆菌(Escherichia coli)是最为常见的食源性病原菌之一,其携带志贺毒素的致病大肠杆菌可引起血性结肠炎和溶血性尿毒症综合征,严重危害人类健康。益生菌是一类活的、一定剂量下对机体有促进作用的益生微生物,其中植物乳杆菌(Lactiplantibacillus plantarum)是一种广泛存在于乳制品、发酵制品、动物肠道和粪便中的益生菌,具有良好的抑菌效果及提升机体免疫功能的作用。本文系统综述了植物乳杆菌拮抗致病大肠杆菌的研究进展,剖析植物乳杆菌在体内外拮抗大肠杆菌的作用机制,进而总结植物乳杆菌在畜禽/水产养殖业、食品加工制造业和临床治疗中的应用模式,以期对益生菌在食品安全防控应用提供参考。

Foodborne pathogens contaminate food through a variety of ways, by which they enter the human body and infringe their health, resulting in huge economic losses to the society. Escherichia coli is one of the most common foodborne pathogens with Shiga toxin, which causes hemorrhagic colitis and hemolytic uremic syndrome, and seriously endangers human health. Probiotics are a class of live microorganisms that promote the health status at a certain dose. Lactiplantibacillus plantarum is a typical species of probiotics that widely found in dairy products, fermented foods, animal intestines and feces, which has good antibacterial effect and improves the immunity function. In this paper, the research progress of Lactiplantibacillus plantarum against pathogenic Escherichia coli were systematically reviewed, then the antimicrobial mechanism of Lactiplantibacillus plantarum against pathogenic Escherichia coli in vitro and in vivo were analyzed, and the application models of Lactiplantibacillus plantarum in livestock/aquaculture industry, food processing and manufacturing industry and clinical treatment were also summarized, in order to provide references for the application of probiotics in food safety control.
